Lunch Boredom


I have a little dilema, and was wondering if you might be able to help? 

I have hit a wall when it comes to thinking up healthy, delicious, interesting, lunches for the BF and I to take to work. I know there are plenty of yummy options out there, but my mind has gone blank, and I seem to have lost all lunch inspiration.

This is not a good thing.

It usually means that I take peanut butter sandwiches to work, am so bored at the thought of them, that I go into town, spend far too much money on junk and regret it later in the afternoon when whatever it was I bought, has failed to sustain me throughout the rest of the day. Boo.

If you have any ideas I would LOVE to hear them! 
I'm happy to take a little time the night before to cook something, or whip something up quickly in the morning, I just need some wonderful ideas!

  1. I make a pot of soup on the weekend, bag it up, and reheat it during the week. I also make a lettuce mix and have it ready for salads with lots of toppings. We always have sandwich meat on hand, and we have things like kipper and tuna for a fish.

  2. Ooh, you could e-mail Busy Bee Lauren (www.busybeelauren.blogspot.com) because she has a healthy eating club that sends out emails for inspiration. You wouldn't have to follow the menu exactly, but it'd give you a lot of ideas!

  3. Stir fried vegetables with meat (or fake meat/tofu) with soy sauce and honey! I know it sounds boring, but it's quick and easy and healthy (if you don't uses masses of oil like I do...)

  5. Make a pot roast of something...You can always pour it over pasta, top it on rice or eat bread or salads with it :) And the more you reheat it, the more flavorful it becomes :)
